v8-cmake currently tracks upstream's 8.0 branch. The 8.1 branch is imminent.

It'd be good to be able to (easily!) track multiple branches, bonus points if sync'ing with upstream is done in a as-much-as-possible automated manner.

E.g., a GH action that runs update_v8.py, checks it builds and passes tests, then commits the result.
